Lombard pure goat's milk cheese with raw, non-pressed paste, processed like a pecorino. The paste is very white and compact, with fine, regular eye formation. Intense and refined flavor, reserved for gourmets.
Matured for a minimum of 4 months, but can be aged for up to over a year.
