Smoked Swordfish

Slice of swordfish handcrafted in Sardinia. Smoked cold with woods of the Mediterranean scrub, including mastic, arbutus, myrtle, but also pine and a marsh grass typical of this Sardinian territory: the "Nerbiatzu", the oven-sweeping grass.
On the palate it remains very soft and fresh.
