Tortellacci, also called cappellacci in some areas of Emilia-Romagna, are large tortelloni, with a yellow dough rich in eggs (27%) and a very abundant filling.
The filling consists of: cooked pumpkin puree (60%), Parmigiano Reggiano and a pinch of nutmeg.
They go well with different condiments: Ferrara style, meat sauce, Mantuan style with amaretti grains or with a tasty cheese or crispy bacon.
In the package there are about 37 tortellacci: 9 portions are recommended, 4 tortellacci to compose a dish.
