Cheese made from 100% milk of Italian buffaloes with soft, uncooked texture, small eyes and an underbrush scent. Washed rind orange in color, sometimes with grayish streaks, non-edible. Sweet-tasting, slightly acidic, fresh and aromatic.
Matured a minimum of 30 days.
