Honeydew & Flower Amatrice Pecorino

Pecorino made from Amatrician milk refined with forest honeydew and covered with flowers including: chamomile, elderflower, blue cornflower, safflower flowers and sunflower petals. Inside the soft paste are drops of honey.

Curing takes place in wooden vats containing forest honeydew. This process allows the honeydew to penetrate the paste by osmosis, giving it unmistakable flakiness and color. The perfect combination of the sweetness of the honey and the spiciness given to it by the long aging.

Aged a minimum of 6 months.
