Lightly smoked according to an ancient technique recovered by a family of young Venetian cheesemakers, using an artisanal smokehouse with only natural beech wood. The great news is the use of this technique in a sweet and creamy blue cheese. It is an extremely delicious cheese, never cloying, in which the sweetness blends with the smoky note of beech wood. An amazing result emerges. Aged 1 and a half months.
