An ancient recipe from central Italy taken from our historic bacon cookery and made gourmet by combining garlic with black paper. The procedure is unique and involves seasoning the bacon with a curing of black pepper and garlic, both inside and outside, before rolling. Done entirely manually. Delicious on bruschetta, but also for imaginative culinary preparations.
