The leavening and cooking take place inside the aluminum pans, this very artisanal procedure, typical of an oven, gives the dough a shape similar to a focaccia, plus extra virgin olive oil is added, which makes the surface of the product slightly greasy and tasty.
The double leavening makes this product crumbly and crunchy on the outside, but also soft and fluffy on the inside.
