Sileo from the Latin "silence", is the cooked ham that rests in the hills, where an ancient ham factory in San Marino has preserved over time the unique recipe of the three rests. From national PP thigh selected. The walnut trunk mold gives it a low-waste shape.
The meat first rests for a few days in its salt pan so as to absorb it naturally. Then the historic churns massage it slowly with alternating rest so as to allow the salt pan to penetrate by natural osmosis. Finally, it is cooked in a steam oven, in cook-in, that is, inside its mold, and then rests again in the oven.
It is a very soft cooked ham with a round taste.
