Not the usual culatello

Obtained from the same leg as the culatello, it is made from the smallest and lean meat nut. The meat is salted by hand, in dry salt and left to rest for 15 days before being tied by hand into rope by expert craftsmen. Season slowly, for a period of not less than six months. More lean than the culatello, it has a sweet and savory taste, with an intense aroma with hints of long aging. It is sliced thinly.

Aged for a minimum of 6 months.
