Heavy selected pork knuckle, seasoned with its special salt pan with plums and Sangiovese: first the wine is diluted with a brown stock based on meat broth, prepared by the company's chef. Then the plums, cooked and blended, and honey are added. It is a tasty dish balanced between the intense flavor of the wine and the sweetness of the plums and honey. It is advisable to heat the shank in a bain-marie or in a pan with the salt pan in the bag so that the meat completely absorbs the flavor.
