Cheese produced by the skilled hands of a dairy in Novara that still makes "gorgonzola as it once was" and which has revived this expertise in the production of a creamy goat's blue cheese. The crust is not present at the top. Dry salted on the surface, traditional seasoning on fir wood boards in statically cooled cells with a high degree of humidity for 55-60 days. Raw white in color, moderately blue-veined, with a soft and creamy consistency. Sweet marbling.
