Fresh goat's milk cheese from a small Lombard dairy that has made French dairy techniques its own. Handmade with microbial (vegetable) rennet and edible crusts.
Petit Carrè is made from pasteurized milk with a velvety flowery rind. With a soft and slightly creamy texture in the undercrust, with a more intense flavor with hints of undergrowth and hazelnut. Aged 1-2 months.
