Gentile Montano Salami

Salami of ancient peasant tradition, it is made of numerous lean cuts, minced bacon and ham and shoulders, it is stuffed into the final part of the gentle casing, (the bovine straight for the 1.5 kg format) which is tasty and fatty and allows a longer seasoning.
It can be recognized by its peculiar slender shape with a nice roundness at the end and by the intense taste due to the lean dough (fat percentage 12%).
