Mediterranean Anchovies
Anchovies of the highest quality, caught in the Mediterranean Sea, 7-8 fillets per tin. They are deprived of the head and gutted, then salted for 8/10 months where the meat matures and takes on a reddish-brown color and the characteristic flavor. Removed from the salt, they are peeled and filleted by hand with the utmost care, stowed in tin and preserved in olive oil, excellent quality.
