Aged pecorino with a slightly spicy flavor, made with only local Amatrician milk. The paste is soft, slightly eyed, straw-colored. The rind has the typical veins of the ribbons used in the past to give it its typical shape; in fact, it is an ancient recipe. From the great balance between its piquancy and intensity of taste typical of aged pecorinos.
Matured for a minimum of 7 months.
