Sweet Gorgonzola produced artisanally with milk from cows raised in the province of Novara. Processing is entirely manual: both salting and the typical operations of aging. The use of fir boards and poplar bundles, combined with the microclimate created in the static cells, favor the development of a microflora that characterizes the rosy coloration of the rind and helps accentuate its flavor.
Matured for a minimum of 70 days.
