Pecorino aged in straw as Tuscan farmers once did: they aged the cheeses in straw and hay to preserve them and protect them from insects, mold and fungi. Although it is no longer necessary today, this custom is still continued for reasons of taste. Aged in old stone jars that give artisanal and irregular shapes.
The paste is straw yellow in color, with few holes and not very crumbly. It has a strong taste and aroma reminiscent of that of mowing hay in June, with hints of straw in the parts closest to the rind. The rind is not edible.
Aged for a minimum of 4 months.
