Cheese produced in the Historic Dairy of Amatrice with only local cow’s milk that is processed within 12 hours after milking.
Its peculiarity is linked to the granularity of the white paste that becomes friable at a slight pressure. Aged for at least six months in a cave, it has a sweet taste that becomes slightly more pronounced as the ripening increases, and an aroma of freshly milked milk.
Great to enjoy at the table or as a perfect appetizer.
