Caciocavallo is a spun cheese made with only cow’s milk from cows that graze, under the control of small local farmers, in an area of the Avellino plateau.
Its particularity is the two months of maturation at controlled temperature followed by two months of aging in a cave. The taste and smell are unique: characterized by notes of fresh grass, melted butter, and a honey aroma, intensified by the cave.
Ideal to melt on hot bread.
